Summary
MONDAY THE chicken and mutton has been marinating in different sauces overnight so it's ready to be prepared when I get into the shop at about 7.30am. I used to open at 11am but have started doing breakfasts and opening at 8am because I would be here anyway preparing food so I might as well open up for my customers. Lunchtime is the busiest time for me and I have a girl who comes in to help out. This is the first business that I've run and I've found the most difficult thing is getting the right staff. Since I started in March last year, I've had 13 different people come and go. Thankfully, my one employee at the moment is very good. There have been times when I've been cooking and serving on my own for weeks on end and it isn't easy when it's busy.
TUESDAY I'm in the cafe at 7.30am again to start preparing the food. Being in Bramble Street, I get a lot of people in from the gym around the corner because Caribbean food is healthy and has lots of flavour. It's what made Usain Bolt the fastest man in the world. People are getting more interested and, once they try it, they come back time and time again. At first, this was just a sandwich shop selling regular cobs and things but I started doing Caribbean food about six months ago. People who I'd cooked for at home had said they liked my food so I decided to give it a go. Rice and peas, curry chicken and curry mutton are now my best sellers.
